Healthy Roasted Beet Salad Recipe. A great part of your weight loss diet. In this video tutorial Mariette will demonstrate how to make a beet salad that she roast in the oven, instead of boiling.  All the nutrients stay with the beet when roasted.  Beets salad is served cold, and the longer it stays in the fridge the more flavorful it becomes.  So it is recommended to refrigerate for at least 1 hour or even over night. A lovely summer refreshing light recipe.  Make this part of your cooking light and healthy weight loss diet or simply because you love it! Also delicious dressing with raw garlic crushed, vinegar.  Roasted Beet salad is very tasty and if you're looking for a healthy salad recipe then you just found one.

Instructions:

1) Preheat Oven: 400F Degree

2) Clean the beets with water then wrap individually in a sheet of foil. Also can be baked together in a larger piece of foil.

3) Bake for approximately 45 minutes. Allow to cool completely.

4) Remove the skin and cut into bite size cubes and place in a glass bowl.

5) To make the dressing: In a small bowl add the red wine vinegar, olive oil, garlic and salt and mix together well.

6) Pour the dressing over the beets, sprinkle the parsley and mix gently.

7) Move to serving dish and Enjoy!

*NOTE - Handling beets can get messy, and avoid getting the beet juice on clothing as it will stain. My kids know that first hand!

*NOTE - Cover and place in the fridge for several hours or over night. The beet salad will taste even more amazing.

Ingredients: 
  1. Beet - 6 Count - Baked
  2. Garlic - 3 to 5 Clove - Crushed
  3. Parsley - 4 Tablespoon - Finely Chopped
  4. Red Wine Vinegar - 3 Tablespoon
  5. Extra Virgin Olive Oil - 2 to 3 Tablespoon
  6. Salt - To Taste
